Something from nothing..


On a completely random note.. I got the idea to make something well, random. Sauteed vegetables, steamed jasmine rice, and meatballs in a red wine and roasted tomato and pepper sauce. I realize that this is not your everyday meal, but I'll tell you it was really delicious. It is a little different, but it is highly customizable to your specific taste. The sauce for the meatballs makes everything else less important. This meal could easily be made with potatoes instead of rice. Any type of vegetable, I would have used green beans if I had them, which, since this photo, I have remade this meal with just that, potatoes and sauteed green beans. This meal was created because I was hungry one evening and didn't have the typical ingredients to make any of our more common meals. And one of the things I've been lucky to inherit is the ability to make something from almost nothing. Routing around in the kitchen I came across the veggies in the freezer, the meatballs, and tomatoes. There is always a good supply of rice in this house, so it all seemed to fit. Red wine goes well with the tomatoes so I thought, why not. Typically, I would have served these meatballs with sauce over pasta, but I wasn't in the mood for pasta so this is the end result. We all enjoyed it so much the first time, we make this fairly frequently now. I hope this inspires you to go back and search your kitchen to create something different from ingredients you wouldn't normally think to put together.
